Fitness Chili (With a fat burning kick!)

  • 1 Tbsp. pure organic grape seed or coconut oil
  • 1/2 c. Red onions finely chopped
  • 1/2 c Celery finely chopped
  • 1 c Red bell pepper finely chopped
  • 1/2 c Carrot finely chopped
  • 2-4 garlic cloves, finely minced
  • 1/2 -1 jalapeño finely minced (depending on how much heat you can stand)
  • 1 1/2 lbs. ground bison, lean ground turkey or grass-fed beef
  • 2 tsp. fresh thyme
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • Himalayan Pink Salt or Sea Salt
  • 4-6 diced tomatoes
  • 12oz. fresh homemade or all-natural Salsa

Optional: 8oz Bean, other fresh herbs, finely chopped veggies, or brown rice. Garnish with cilantro.

Melt oil over medium heat in a large pan or slow cooker and sauté all vegetables listed for about 5 minutes or until onion is translucent.  Add ground meat, and spices, stirring frequently for an additional 5-6 min. Add Himalayan pink salt, diced tomatoes and salsa to the pot and mix thoroughly. Cover, reduce heat, and let the chili simmer for at least 1 hour. The longer this sits the more the flavors blend. A slow cooker or  crock pot can be used in place of the stove top method. Simply place ingredients in and simmer on low until you are ready to enjoy your hot precooked chili. If you have a high speed blender or food chopper of any kind, prepare this nutrient rich chili in minutes and eat like royalty!
